Pasteurized goat's milk cheese. An aged goat cheese from Catalonia, Provence of Girona in Northern Spain. Creamy, nutty, slightly tart semi-soft cheese. Mild flavor. It has a semi-firm texture and its rind is covered with a blue gray velvety mold.

Pair it with Manzanilla olives or a dollop of fig paste/jam brings out Garrotxa's underlying sweetness. For a tangier taste, pair with anchovy fillets. Garrotxa is a modern, farmhouse, pasteurized hard cheese. Although this cheese is based on an old recipe, it has been developed and marketed, using modern methods. The pure, white milk seems to have absorbed the flavor of fresh walnuts and the scent of mimosa, while retaining the fresh crispness of young grass. It comes with a gray rind and it has a bone, white interior. It has a mild flavor, nutty, with herbal hints. Garroxta is made all over Catalonia in northern Spain.
Actually this is a cheese recovered from their traditional, and extinct form, adapting to the conditions of the area. Ripened in very wet and cool environments, which eventually leads to the appearance of mold bluish gray hue covering its rough bark.
