It is a square shape and rounded edges, cheese made with milk cow pasteurized and matured slowly. Of taste and aromas very evolved, complex and intense with a long oral presence a little sweetness at the end. Suggests hints of old wood leather tanned either maturing cellar, usually appear a spicy sensation.
This cheese by the firm and hard texture, cut it is flakes.
As suggestion in this format we recommend a special form of cutting it, we include a knife type wedge to cut Parmesan-style cheese, is to remove the top cover of the cheese and then with the wedge go making cheese gradually introducing the cradle and giving a small twist of wrist as you can see in the video.
