They buy the fresh raw material directly from the rasher, and then salt it and obtain the salted anchovy. The fish is cleaned carefully and bottled in barrels, at the Santoña factory, beside the sea. 1 year later, the production process continues by cleaning, desalting, cutting and filleting, until we get an exquisite and high quality anchovy fillet in olive oil.
